Yes, REALLY! Don’t knock it ‘til you try it! This delicious 5 Bites per serving of stuffed tomatoes by 5 Bite Granny can be your lunch or served as few appetizers to others. These little morsels make for a powerhouse munch. There is no cooking! No baking! NO KIDDING!
You will tickle your taste buds, and remain satisfied for hours. You may think it is a bit much to prepare for just one meal, but one bite and you will be more than glad you made these. Just think…. you will receive your daily requirements from all three columns, protein from the cheese and egg, carbs from the oatmeal, and packed with veggies from the tomatoes, kale, and cayenne, to chives. Plus, you’ll enjoy a great meal, to boot. Pop one in your mouth ... one bite per tomato and five will make an entire wonderful meal on a hot afternoon.
I simply love picking homegrown cherry tomatoes for this purpose… it is not harvesting, it’s rewarding!
INGREDIENTS
1/2 Tbsp refrigerated oatmeal
5 cherry tomatoes
About five pinches of salt
1/8 cup Monterey Pepper Jack cheese, grated, crumbled
1/2 hard- boiled egg, chopped fine
A tiny bit of kale, chopped extra fine
½ slice bologna or other lunch meat, chopped fine
1 Tsp Ranch dressing
1 tsp mustard
1/8 tsp cayenne powder (optional)
INSTRUCTIONS
1. One hour or the night before, mix the oatmeal with a half cup of water or any type of milk. Drain the fluid that is not absorbed prior to mixing with the other ingredients.
2. Cut off just the top of the cherry tomatoes and with a teaspoon remove the seeds and pulp of the tomatoes. Put the seeds and pulp aside if you chose to use them later. Turn the tomatoes cut side down on a paper towel for 15 minutes to drain, then sprinkle a pinch of salt inside each one.
3. Mix all of the ingredients except cayenne and chives. Stuff the tomatoes with this mixture.
4. Sprinkle cayenne powder on the top and serve.
