I Love This Recipe
A mini quiche is a wonderful way to satisfy a craving. On the 5 Bite diet you'll be happy to know that a crustless quiche is absolutely low in carbs. This version is filled with a lot of protein such as; ground turkey taco meat, chicken, eggs (of course), and plenty of rich pepper jack mozzarella cheese. The ingredients are started in a frying pan, then transferred into your muffin tins in a matter of minutes and the quiche bakes in the oven for less than 10 minutes. Recipes don't get much easier than this. You will barely have time to wash the frying pan and utensils before it is time to remove the quiche from the oven.
Ingredients (divide this recipe in half for a great 5 Bite meal)
3 rings of a red onion, ¼ inch wide, finely chopped
1 ring of a green bell pepper, ¼ inch wide, finely chopped
1 red sriracha pepper, finely chopped, optional
3 slices of red tomato, ¼ inch wide, finely chopped
¼ pound ground turkey taco meat
⅛ teaspoon onion powder
⅛ teaspoon garlic powder
⅛ teaspoon chili powder
½ skinless, boned chicken breast, diced
1 cup shredded pepper jack cheese
3 large eggs
Directions
Preheat your oven to 350 degrees F and coat 5 muffin cups for 10 bites or two for 5 bites.
Brown all vegetables, taco meat, and spices, together in a frying pan over medium heat until the vegetables are no longer raw and the meat is cooked thoroughly.
Toss in the chicken and simmer until cooked.
Remove from the fire and allow to cool a few minutes before adding the cheese.

Once the cheese has been well mixed into the cooked portion, add the three eggs, mixing them into the rest.
Pour your quiche batter into the prepared muffin cups and bake 8-10 minutes.
Expert Tips
· My DH loved these without anything on them… He is 6’4”, weighs in at 337, and began restricting his intake to 10 bites per meal after seeing how easily I lost over 55 pounds on the 5 Bite Diet. I, however, drizzled ranch dressing, sriracha catsup, and Cholula over them, and we eat them for any meal.
· Serve hot or cold, or toss in baggies and take to work or school.
· If you are feeding others that are not on the 5 Bite Diet add refried beans and a green salad on the side to round out the meal.
· Feel free to get creative and add your own favorite ingredients to this delightful quiche. A few of our favorite add-ins include:
· sliced black olives, sliced green bell peppers, cooked Italian sausage, or a handful of fresh spinach.
