This Crustless Quiche Lorraine recipe is so incredibly delicious and perfect for a single meal serving. I adapted the recipe for this quiche from ONE DISH KITCHEN. Mine is made with one egg, milk, ham instead of bacon, and of course, cheese. I also baked it in a small baking dish. This it's a high protein meal is just what Doctor Lewis would have ordered for breakfast, lunch or dinner.

I may have been raised on recipes from Good Housekeeping or Betty Crocker cookbooks... but my dishes are not new... my body is very old... but I assure you the food inside the dishes will melt in your mouth and beg to be eaten.

Ingredients
1 large eggs
2 tablespoons milk (any milk or cream)
1/4 teaspoon kosher salt (optional)
1/8 teaspoon coarsely ground black pepper
1/2 teaspoon onion power
1/2 teaspoon Italian seasoning
1 tablespoon Rotel sun-dried tomatoes with jalapenos
2 slices cooked ham, crumbled
½ cup any cheese, shredded
Instructions
Preheat oven to 375 degrees F (190 degrees C).
In a medium-sized mixing bowl whisk together the eggs and the cream. Stir in the spices, meat, tomatoes and cheese.
Pour into lightly buttered baking dish.
Bake until quiche is puffed and golden, about 25 minutes.
